Ingredients

  • 250 g mushrooms (Bovist), peeled
  • 250 g onion (s), diced
  • 2 tablespoon rapeseed oil
  • 2 cloves garlic)
  • 1 small leek stick (s)
  • 250 ml chicken broth
  • 300 ml cream
  • some white wine

Instructions

  1. I don`t have a lot of recipes to make boviste. I mostly bread and fry them like a schnitzel. But you don`t like to eat it that often, that`s why I came up with this recipe, which is just a suggestion.
  2. In the hot oil, sauté the onion and garlic cubes until they are translucent, also brown them a little. Shortly before the end, fry the finely chopped leek stick.
  3. Peel off the skin of the bovist and cut it into large cubes (approx. 1.5 cm) and add to the onions. Fry briefly while stirring carefully. Pour in the broth and cream. Simmer for about 5 minutes. Season to taste with salt and pepper. Finally flavor with a little white wine.
  4. We ate it with homemade onion bread. But I can imagine that potatoes, pasta or rice also taste good with it.
