Ingredients

  • 5 egg (s)
  • 1 pinch (s) salt
  • 175 grams sugar
  • 100 g flour
  • 75 g cornstarch
  • 1 packet baking powder
  • 180 g chocolate flakes
  • 1 ½ kg sour cherries, from the glass
  • 10 sheets gelatin
  • 1 kg yogurt (stracciatella)
  • 600 g whipped cream

Instructions

  1. Preheat the oven to 175 ° C (convection 155 ° C). Drain the cherries.
  2. Separate eggs. Beat egg whites with salt until stiff. Mix egg yolks with sugar until creamy. Pile the egg whites on it. Mix the flour with the starch, baking powder and 150 g chocolate flakes. Mix in with the egg whites. Spread the mixture on a baking sheet lined with baking paper, bake for about 15 minutes. Take out and let cool down.
  3. Spread half of the cherries on the cake base. Soak, squeeze and dissolve the gelatine. Pour under 4 tablespoons of yoghurt, mix with the rest of the yoghurt. Chill for approx. 2 hours. Whip the cream. As soon as the yogurt starts to gel, fold in the cream. Spread the cream on the cherries, cover with the remaining cherries. Scatter the rest of the chocolate chips.
