Cottage Cheese Casserole “Ideal” with Semolina and Candied Fruits

Homemade, delicious curd casserole with semolina porridge. Delicate, airy, keeps its shape well, moderately sweet. The texture of the casserole is uniform and very pleasant. Ingredients

  • Cottage cheese – 500 g
  • Butter – 30 g
  • Eggs – 2 pcs. (100 g)
  • Milk – 100 ml
  • Water – 100 ml
  • Semolina – 50 g
  • Sugar – 100 g
  • Candied fruits (orange) – 30 g
  • Salt – 1 pinch
  • Vanillin – 1 pinch
  • Vegetable oil – for lubricating the mold

Directions

  1. I have cottage cheese 5% fat, in packs. I immediately combine milk with water. The butter needs to be soft. Sugar can be adjusted independently. My casserole is not very sweet. Candied fruits – optional and available. Can be replaced with raisins, dried apricots, or the zest of one orange. Or put nothing at all.
  2. I combine semolina in a saucepan with salt and vanilla. I fill the semolina with milk and water. I mix it and send it to the stove. With constant stirring, bring to a boil. Add softened butter to the hot semolina porridge. I mix well.
  3. I cover the semolina porridge with butter with something, since warm or hot porridge will combine better with cottage cheese, and set it aside. I heat the oven to 160-170 degrees.
  4. It is better to break the cottage cheese with an immersion blender or rub it through a sieve until it is pasty.
  5. I add eggs and sugar to the curd. I mix well. Then I add the semolina. Mix again.
  6. If there are lumps, you can break through with a hand blender. The mass should be homogeneous, creamy. And at the very end, I add candied fruits. I mix everything.
  7. I will bake in a cake pan. The size of the mold is 12×21 cm. I grease the bottom and sides with vegetable oil and cover it with parchment.
  8. I put the curd mass in a mold, level it, and send it to bake in the oven, preheated to 160 degrees, for 40-45 minutes. Be guided by the timing of your oven. But do not set the temperature high, as the curd casserole will rise a lot and then fall off and be wrinkled. 🙂 Although this will not affect the taste.
  9. The casserole will lightly brown. Let her cool completely.
  10. I take it out of the mold. Decorate with fruits or berries if you wish. You can serve curd casserole with honey, jam, or fresh sour cream.
