Cottage Cheese Casserole with Black Currant and Semolina

It has long been no secret that cottage cheese casserole is not only tasty but also very healthy. And if you cook such a casserole with currant berries – doubly useful! The casserole does not contain a single gram of flour and butter, but at the same time, due to semolina, it keeps its shape well.

Ingredients

  • Cottage cheese – 500 g
  • Black currant – 100-150 g
  • Eggs – 2 pcs.
  • Sugar – 2 tbsp
  • Semolina – 3 tbsp
  • Baking powder – 1 teaspoon
  • Vegetable oil (for lubricating the mold) – 10 ml

For decoration:

  • Coconut flakes – 0.5 tbsp
  • Fresh mint – 1 sprig
  • Black currant – 15 berries

Directions

  1. Rub the curd with an immersion blender or through a sieve.
  2. Wash and remove eggs from the shell, separating the yolks from the whites. Send the egg whites, whisk, and beating container to the refrigerator. Add yolks, sugar, and 2 tablespoon to the curd. tablespoons of semolina.
  3. Mix. Leave for 10 minutes to swell the semolina. Turn on the oven to heat up to 160 degrees.
  4. Rinse the currants, remove the spoiled berries, stalks, and, if desired, “tails”. Dry the berries on a paper towel.
  5. Beat the cold egg whites until firm peaks. The shipping time depends on the power of your technique. I beat for 3 minutes. Add currant berries to the curd mass.
  6. Stir gently, being careful not to crush the berries. Add whipped egg whites and baking powder. Stir with a silicone spatula from the bottom to top.
  7. Grease a baking dish (size – 10×20 cm) with vegetable oil and sprinkle with semolina.
    Put the curd mass into a mold.
  8. Cook curd casserole with black currants and semolina in the oven at 160 degrees for 35-40 minutes. The casserole rises in the oven but then settles slightly.
    Allow the casserole to cool completely in the mold.
  9. Cut the cooled cottage cheese casserole with berries into portions, decorate as desired. I garnished with coconut, mint leaves, and fresh currants. If desired, you can serve such a casserole with sour cream. There is plenty of sweetness in it, so there is no need to serve it with honey or another sweet topping.
