Instructions

  1. Preheat the oven to 150 ° C. Beat the egg yolks with powdered sugar to a light yellow cream.
  2. Heat the milk, do not boil, and stir in the custard. Let the mass thicken slightly. But she is not allowed to cook. Then remove from the heat and stir in the crème fraîche.
  3. Pour the mixture into small molds, place in a water bath in the oven and cook for 35 minutes. Take out of the oven, let cool and put in the fridge for a while.
  4. Preheat the grill just before serving. Sprinkle the crème brûlée with sugar and caramelize under the grill. A bunsen burner can also be used for caramelizing.
