Ingredients

  • 200 g wheat flour type 550 or type 405
  • 250 g spelled flour
  • 1 pack dry yeast
  • 1 tablespoon sugar
  • 10 g salt
  • 0.5 teaspoon ½ bread spice mix
  • 0.5 teaspoon ½ pepper, black, ground
  • 40 g chia seeds
  • 20 g flaxseed meal
  • 250 g quark, 20%
  • 150 ml almond milk (almond drink)
  • 150 ml water
  • 3 tablespoon rapeseed oil

Instructions

  1. Sieve the flours and dry yeast. Mix in the other dry ingredients. Warm the almond milk slightly with water and oil. Work the mixture with the quark under the flour mixture with the help of a wooden spoon. The dough is pretty soft.
  2. Let the bread dough rise for about 1 hour until the volume has doubled.
  3. Brush a 30 mm loaf pan with a little oil and dust with flour. Pour in the dough, dust it with a little flour and carefully press it into the mold by hand. Let the dough rise a little more until the bread dough has reached the top, about 30 minutes.
  4. Meanwhile preheat the oven to 250 ° C and place a metal bowl in the bottom. Put the loaf pan in the oven, pour half a cup of water into the metal bowl and immediately close the oven door. Then bake the bread for 15 minutes, then switch the temperature down to 150 ° C and bake the bread for another 25 minutes.
  5. Take the bread out of the mold and let it cool down on a rack.
