Eggplant in Soy-Ginger Caramel

Chinese style eggplants.

Ingredients

  • Eggplant – 1 pc.
  • Chicken egg – 1 pc. (protein)
  • Potato starch – 1 tablespoon.
  • Onions – 40 g
  • Garlic – 1 tooth
  • Ginger, root – 1.5 cm
  • Soy sauce – 50 g
  • Sesame oil – 1 teaspoon
  • Honey – 1 tablespoon
  • Sugar – 2 teaspoon
  • Ground coriander – 0.5 teaspoon

Directions

  1. Coarsely chop the eggplants. 
  2. Season with salt, let stand for 20 minutes.
  3.  Then squeeze each one out of excess moisture.
  4.  Now they will not absorb fat. Add chicken protein, starch to the nickname, mix, and deep-fry. We transfer to a paper towel. 
  5. While they are cooling, prepare the caramel. Chop the onion coarsely, fry until golden, and add chopped garlic and ginger.
  6.  Next, add honey, sugar, soy sauce, sesame oil, coriander. We remove from the fire. Transfer the eggplants to caramel, stir, serve with chopped cilantro.
