Ingredients

For the dough:

  • 170 g quark
  • 4 tablespoons milk
  • 6 tablespoon oil, tasteless
  • 100 g suar
  • 1 lemon (s), the grated zest it
  • 1 pinch (s) salt
  • 1 pinch (s) vanilla
  • 1 pinch (s) cinnamon
  • 1 pinch (s) cardamom
  • 400 g flour
  • 1 packet baking powder

For the filling:

  • 3 tablespoon Nutella (or other nut nougat cream)
  • 200 g walnuts, round
  • 60 g suar
  • milk
  • 1 tablespoon cornstarch
  • 1 egg (s)
  • 1 pinch (s) salt
  • 1 pinch (s) vanilla
  • Flour for the work surface
  • Icing sugar for dusting

Instructions

  1. For the dough, mix the quark with the milk, oil, sugar, lemon zest and the spices. Mix flour with baking powder and add, it is best to use the dough hook first. Then work everything into a supple, smooth dough - ideally take your hands for this. The dough should no longer stick and be similar in texture to yeast dough. On a well-floured surface, roll out into a rectangle about 0.5 cm thick.
  2. Brush the rolled out dough with the Nutella (this step could be omitted if necessary, then possibly use a little more sugar for the filling.)
  3. For the filling, whisk the ground walnuts with sugar, egg, salt, cornstarch and milk. The amount of milk should be chosen so that the mass becomes spreadable and pulpy. This can vary between 50 and 100 ml - depending on how finely the nuts are ground.
  4. The filling is then placed on the rolled out dough that has been coated with Nutella and spread to about 2 cm from the edge.
  5. Now roll up from the longer side and place on a baking sheet lined with baking paper. Make a zigzag cut at the top with a knife.
  6. Bake in the preheated oven at 200 ° C top / bottom heat for about 20 minutes, then switch down to 180 ° C and bake for another 20 minutes. If the strudel gets too dark, cover with aluminum foil.
  7. When it is done, cover it with a kitchen towel and let it cool down, so that it stays nice and juicy and soft. Dust with powdered sugar and enjoy.
