Garlic-Marinated Baked Vegetables

Delicious, bright and aromatic baked vegetables marinated with herbs, apple cider vinegar, soy sauce and garlic.

Ingredients

  • Bulgarian pepper – 4 pcs.
  • Zucchini – 1 pc.
  • Eggplant – 3 pcs.
  • Bulb onions – 2 pcs.
  • Tomatoes – 2 pcs.
  • Hot chilli pepper – 1 pc.
  • Garlic – 4 cloves
  • Fresh dill – 1 bunch + for serving
  • Soy sauce – 4 tbsp
  • Apple cider vinegar – 2 tbsp
  • Vegetable oil – 4 tbsp
  • Ground black pepper – to taste
  • Salt to taste

Directions

  1. Peel and chop the garlic. Finely chop the dill, add to the garlic. Pour vegetable oil, apple cider vinegar and soy sauce there. Mix everything thoroughly. The vegetable marinade is ready.
  2. Peel the onions and zucchini. Peel sweet and hot peppers from seeds. Cut eggplants, bell peppers, courgettes and tomatoes into large pieces. Cut the onion into half rings. Cut hot peppers into rings.
  3. Put all vegetables in a deep baking sheet. Pour the cooked marinade over. Season with pepper, salt to taste and mix well. Tighten the baking sheet with vegetables with cling film and leave the vegetables to marinate for 1 hour.
  4. Bake vegetables in an oven preheated to 180 ° C for 30-40 minutes. Put the prepared baked vegetables on a dish, sprinkle with finely chopped fresh herbs and serve.
