Glass Noodle Salad with Pork, Mint and Ginger

Ingredients
- 350 g minced pork
- 2 cloves garlic (not specified more), chopped
- 2 tablespoon oil, (peanut or soybean oil)
- 3 tablespoon broth, hot
- 100 g lass noodles
- 1 handful mint, small and coriander greens
- 0.5 ½ bunch spring onion (s), Thai or 1 - 2 large spring onions cut into pieces
- 1 medium onion (s), red, halved and cut into thin strips
- 1 small carrot (s), cut into julienne strips
- 2 tablespoon ginger, fresher, cut into fine sticks
- 4 tablespoon peanuts, roasted and roughly chopped
- 2 kaffir lime leaves (magrood leaves) torn into small pieces
- 2 chilli pepper (s) (long-red Thai), pitted and cut into rings
For the dressing:
- 4 chilli pepper (s), green bird`s eye chillies cut into rings
- 1 teaspoon chilli flakes, (dried red small chillies roasted in a pan without fat and roughly ground)
- 6 tablespoon fish sauce
- 3 teaspoons sugar
- 8 tablespoon lime juice

- Heat the oil in the wok. Fry the minced meat and garlic in it for approx. 4 minutes while stirring, but do not brown / roast.
- Deglaze with the broth, turn down the heat and cook gently for another 1-2 minutes. Remove from heat and let cool down lukewarm.
- Pour boiling water over glass noodles in a bowl and soak for approx. 10 minutes. Drain well on a sieve, cut into shorter pieces with kitchen scissors.
- Mix all ingredients for the dressing until the sugar has dissolved.
- Mix the minced pork and noodles with the remaining salad ingredients, add the dressing and mix the salad carefully and well.
- Serve immediately and enjoy lukewarm.
