Gluten Free Orange Cake

A super tender and fluffy cake with a bright citrus flavor and small pieces of nuts. It is incredibly delicious, quick to bake, and contains only five simple ingredients. This cake is suitable for anyone who keeps to a gluten-free diet or suffers from coeliac disease. It can be made either with ground nuts or almond flour.

Ingredients

For a 24 cm mold:

  • Oranges – 2 large pcs.
  • Eggs – 6 pcs.
  • Ground almonds or almond flour – 250 g
  • Sugar – 200 g
  • Leavening agent – 1 teaspoon.

Directions

  1. Preheat the oven up to 190 degrees. Grease a baking dish with some butter and sprinkle it with some flour.
  2. Wash the oranges and boil them for two hours.
  3. Cool the oranges down, cut them into large pieces, and remove the seeds. Chop the oranges in a food processor.
  4. Add the lightly whipped eggs, and mix everything to a smooth consistency.
  5. Combine the ground almonds, leavening agent, and sugar.
  6. Add the orange mixture to the almond one and mix them together.
  7. Pour the batter into the mold and bake it for 45-60 minutes.
  8. Cool the cake down and then take it out of the mold. Serve it with a scoop of vanilla ice cream, Greek yogurt, or whipped cream.
