Ingredients
- 150 g cheddar cheese, coarsely rated, mild or spicy
- 120 g sour cream
- 2 spring onions, cut into rings
- 1 large tomato (s), roasted over the flames, pitted
- 4 g coriander reens, chopped (alternatively flat leaf parsley)
- 2 chilli pepper (s) (jalapeno), pickled, sliced
- 0.5 teaspoon ½ caraway seeds, ground
- salt
- pepper from the grinder
- 8 tortilla (s) (wheat), each 20 cm Ø

- Roast a ripe tomato over a fire, turning it several times, until the skin is black and blistered. Place the tomato on a plate and let it cool down. Tighten the skin with a knife. Halve the tomato, remove the core and cut the tomato into cubes.
- Now mix the cheese with the sour cream, spring onions, tomatoes, coriander, chilli pepper and caraway seeds well in a bowl and season with salt and pepper. Cover and let this mixture soak in the refrigerator (we liked it best after 2 days).
- When the grill is hot, place 4 tortillas on a work surface and brush evenly with the mixture, place the remaining tortillas on top and press them down a little to make sandwiches.
- Oil the grillage. Place the quesadillas on the hot grid and grill for 2-4 minutes on each side. Carefully turn them with a spatula until they are light brown on each side. Remove the quesadillas from the grid and let them cool a little, then cut each quesadilla into 8 corners.
- The recipe makes 48 corners.
