Italian Chicken Tortellini Soup

Delicious quick and aromatic soup with tortellini will not leave anyone indifferent and will make you ask for more.

Serving: 4

Ingredients

  • Water – 1 litre
  • Carrots – 1 piece
  • Leeks – 100 grams
  • Vegetable oil – 1 tbsp
  • Wheat flour – 500 grams
  • Egg – 2 pieces
  • Olive oil – 2 tablespoons spoons
  • Salt – 2 grams

Directions

  1. Prepare the dough: pour flour in a slide on the table, make a depression in the centre. Break eggs into the well, add salt and olive oil. Knead the dough well, gradually adding water, until the dough is smooth and elastic. Cover with a towel and leave for 20 minutes.
  2. Prepare the filling: chop the spinach. Stir the spinach and ricotta.
  3. Roll out the dough thinly. Cut out circles with a diameter of 5 cm from the dough, put the filling on the circles. Sculpt tortellini like dumplings.
  4. Peel the carrots and cut into strips, chop the onion into rings and fry everything together in heated vegetable oil for 4 minutes.
  5. Add tortellini and simmer everything together over low heat for 8-10 minutes, then arrange on plates and serve.
