Meat Bread with Zucchini and Tomatoes Stuffed with Boiled Eggs

Unusual and easy to prepare minced meat casserole with vegetables and boiled eggs filling. This recipe is closer to the meatloaf recipe since no white bread or loaf is added to the minced meat. This versatile dish looks very elegant and is perfect for sandwiches for breakfast and for a meat plate on a festive table.

Ingredients

  • Minced beef – 600 g
  • Eggs – 5-6 pcs.
  • Cream (30% fat) – 50 ml
  • Tomato – 1 pcs.
  • Zucchini – 50 g
  • Sweet red pepper – 50 g
  • Bulb onions – 1 pcs.
  • Fresh parsley – 20 g
  • Garlic – 1-2 cloves
  • Vegetable oil – 30 ml
  • Salt to taste
  • Ground pepper mixture – to taste

Directions

  1. Take the groceries on the list. Boil three large eggs (or four small ones) hard-boiled in salted water for 8 minutes after boiling.
  2. Peel the onion and garlic. Chop the onion into small cubes, finely chop the garlic with a knife. Saute chopped onion and garlic until transparent in a frying pan greased with vegetable oil for about 3-4 minutes. Cool it down.
  3. Combine the ground beef and cream in a bowl. We drive in the remaining eggs (2 pcs.). We mix. Add fried onions and garlic.
  4. Cut the zucchini into small cubes (or you can grate it and squeeze out the excess juice). Finely chop the parsley. We send zucchini and herbs to a bowl.
  5. Cut the sweet pepper and tomato into small cubes (drain the excess juice from the chopped tomato) and add to a bowl. Season with salt and pepper to taste and mix well.
  6. Line a rectangular baking dish with oiled baking parchment and spread half of the minced meat. We ram. Put the filling in the center – boiled eggs.
  7. We close the filling with the second part of the minced meat and press it lightly so that there are no voids. Lubricate the top with vegetable oil.
  8. Slightly tighten the edges of the parchment and fasten it with a toothpick – this way the meatloaf will better keep its shape and will be steamed faster from the inside. We send it to the oven, preheated to 180 degrees, and bake for about 60 minutes.
  9. For the last 10 minutes (about 50 minutes after baking), dry the casserole a little by unrolling the parchment.
  10. Then we take out the finished meatloaf with vegetables from the oven and cool in the form. We cut a beautiful casserole bread into wide slices and serve.
