Ingredients

  • 800 g roast beef
  • 50 g bacon, fat, smoked, sliced
  • Salt and pepper, black
  • 1 teaspoon thyme
  • 6 juniper berries
  • 1 bunch soup greens
  • 1 onion (s)
  • 2 tablespoons oil
  • 250 ml broth
  • 200 ml red wine
  • 1 tablespoon cornstarch

Instructions

  1. Rub the beef roast with salt, pepper, thyme and the crushed juniper berries, brush with 1 tablespoon of oil. Let rest for 2 hours.
  2. Heat 1 tablespoon of oil in the roaster and fry the meat all around until brown. Add the cleaned, finely chopped soup greens and the diced onion, fry briefly, then deglaze with hot bouillon. Fry the roast in the preheated oven over medium heat. After 1 hour pour in red wine and cover the meat with thin slices of bacon. Fry for another 30 minutes.
  3. Strain the gravy with the bacon slices through a fine sieve and thicken with the mixed cornstarch. Briefly boil the sauce through, season to taste and serve separately for roasting. Only cut the roast at the table.
  4. Serve with Brussels sprouts, carrots, corn or tomato peppers with potato croquettes or French fries.
