Ingredients

For the vegetables:

  • 1 large onion (s)
  • 4 cloves garlic
  • 1 piece (s) ginger, thumb-sized
  • 800 g pumpkin (se), (Hokkaido)
  • 4 tablespoon olive oil
  • 2 tablespoon tomato paste
  • 1 teaspoon harissa
  • 1 tablespoon ground cumin
  • 100 ml vinegar, milder lighter
  • 1 lemon (s), add the juice
  • salt
  • Black pepper from the mill

For the skewers:

  • 800 g minced lamb
  • 1 bunch parsley
  • 2 teaspoons mustard, hotter
  • 1 tablespoon cumin, (cumin)
  • 1 tablespoon cinnamon
  • salt
  • Black pepper from the mill
  • olive oil
  • 400 g yourt, Turkish, 10% fat

Instructions

  1. Cut the onion, garlic and ginger into small cubes. Finely chop the pumpkin.
  2. Heat the olive oil and sweat the onion in it. Then add garlic and ginger, fry. Finally the pumpkin. Roast everything well. Stir in tomato paste, harissa and cumin well and fry.
  3. Deglaze with the vinegar and lemon juice and remove from the stove. Season with salt and pepper. Let everything stand for about 15 minutes with the lid closed.
  4. Finely chop the parsley and mix with the minced lamb. Add the mustard, cumin, cinnamon, salt and pepper and mix everything well with your hands. Shape the meat dough into small sausages and stick 5 pieces of each on a wooden skewer.
  5. Fry the skewers in olive oil (they can also be grilled well).
  6. Presentation:
  7. Place the pumpkin vegetables on a plate. Stir the yogurt with a fork until smooth and add. Place the minced lamb skewer on top.
