Ingredients

  • 500 g wheat flour type 00
  • 1 sucuk (Efepasa Pasam Parmak Sucuk), Turkish garlic sausage
  • 6 egg (s)
  • 1 pinch (s) salt
  • 1 pinch (s) sugar
  • 10 ml olive oil
  • 1 cube fresh yeast or correspondingly dry yeast
  • 400 g cheese (pasta filata cheese), 1 small loaf
  • 1 pinch (s) paprika powder, red, hot-sweet, coarse
  • 200 ml water, lukewarm

Instructions

  1. The dough is prepared 24 hours in advance. If it has to be done quickly, a ready-made pizza dough can also be used.
  2. Mix the flour, salt, sugar and yeast together. Then gradually add the lukewarm water and olive oil and knead vigorously for 5 minutes until an even, firm dough is formed. The dough shouldn`t be sticky. If necessary, some flour must be added. Then cover the dough in the bowl with a cloth and place in the refrigerator for 24 hours.
  3. To prepare, take the dough out of the refrigerator and let it stand for approx. 1 hour at room temperature. Then knead again vigorously for 2 minutes. Shape the dough into 3 fist-sized pieces and roll them out individually to a thickness of approx. 3 mm. The rolled out pieces should be approx. 30 cm long and 14 cm wide. Then both ends should be pointed and the sides turned over so that a tight boat is created. The sides should be about 1 cm high so that there is enough space for the filling.
  4. Whisk the eggs with a pinch of salt. Then put the egg in the pide and make sure that nothing leaks. Grate the cheese and place on the egg. The sucuk can be cut into letters and placed on the cheese.
  5. Place everything in the oven for about 15 minutes at 200 degrees, until the cheese turns golden brown. After baking, add a little more of the paprika spice.
