Ingredients
- 10 slices bacon
- 1 small pineapple, fresh or canned
- 5 cl rum
- 3 tablespoon tomato ketchup
- 2 dashes Tabasco
- 1 pinch (s) salt
- 5 tablespoon desiccated coconut

- Remove the pineapple from the stalk (the easiest way is with a pineapple cutter). Then divide each slice into 6 pieces. When using canned pineapple, drain well and also cut into 6 pieces.
- Pour rum over the pineapple pieces and marinate, preferably overnight.
- Preheat the oven to 225 ° C.
- Mix the ketchup with salt and Tabasco. Halve the bacon slices and spread the sauce on both sides.
- Drain the pineapple and roll in coconut flakes, wrap in bacon and secure with toothpicks.
- Line a baking sheet with parchment paper or aluminum foil and bake the pineapple pieces for about 15 minutes until they are nice and brown and crispy.
- Tip:
- When using aluminum foil, coat it with a little oil. This is not necessary with baking paper.
