Pita Stuffed with Hummus and Spring Salad

Filled pita is a great appetizer that can be used to pick any vegetables or meat. This recipe uses hummus, vegetables, and cheese to fill the pita bread.

Servings: 4

Ingredients

  • Whole-grain pita – 4 pcs. (15 cm diameter each)
  • Hummus (chickpea puree appetizer) – 230 g
  • Lemon zest – 1 teaspoon
  • Cucumber (cut into slices) – 1.25 cups
  • Radish (cut into slices) – 3/4 cup
  • Lettuce leaves (cut in half) – 4 pcs.
  • Red onion (cut in half rings) – 1/3 cup
  • Feta cheese (crumbled) – 50 g (1/2 cup)

How to make hummus-filled pita:

Directions

  1. Cut each pita in half to form pockets.
  2. In a bowl, combine hummus with lemon zest. Put hummus in pita halves (about 1.5 tablespoons each).
  3. Add the rest of the ingredients to the pita halves.
