  • 200 g flour
  • 100 g butter, cold
  • 50 grams sugar
  • 1 pinch (s) salt
  • 1 egg (s)
  • 30 grams sugar
  • 20 g butter
  • 1 teaspoon cinnamon
  • 500 g plum (s)
  • 1 packet vanilla sugar

Instructions

  1. For the dough flour:
  2. Knead 100 g butter in small flakes, 50 g sugar, salt and egg first with the dough hook of the hand mixer, then with your hands to form a smooth dough and cover and cool for 30 minutes.
  3. In the meantime, preheat the oven to 200 degrees (fan oven 180, gas mark 4).
  4. Wash, core and halve the plums.
  5. In a pan over high heat, let 30 g sugar, 20 g butter and the cinnamon caramelize while stirring and pour them over a 20 cm tart pan (alternatively the glass lid of a baking dish). Press the plums with the cut surface down into the still warm caramel and arrange them like a brick.
  6. Roll out the dough on a little flour and cover the plums with it. Make sure to press the edge a little inwards around the plums on the sides. Bake in the hot oven for about 30 minutes, remove and let cool down for 5 minutes.
  7. Then turn out onto a plate and sprinkle with the vanilla sugar while it is still warm. Best to enjoy lukewarm.
  8. This variation of the famous tarte tatin with apples tastes warm with ice cream (as a dessert for 4) or cold.
