Ingredients
For the dough:
- 350 g flour
- 250 g low-fat quark
- 250 g butter
- salt
For covering:
- 1 ½ kg leek
- 400 g bacon, diced or diced ham
- 250 g sour cream, (up to 300 ) or sour cream
- 3 egg (s)
- 150 g cheese, rated, e.. Gouda or Gruyère
- salt
- pepper
- nutmeg
- possibly herbs, dried

- Recipe for a large and a small tray.
- Knead the ingredients for the dough and let it steep for 1 day in the refrigerator. The next day, roll out the dough and spread it on the trays and pull up one edge.
- Preheat the oven to 180 ° C.
- Halve the leek, wash and cut into pieces and sauté in plenty of butter. Then mix the leek with the bacon cubes, sour cream, cheese and eggs and season with salt (caution: the bacon is already salty), pepper and nutmeg and add a few herbs to taste.
- Spread the mixture on the dough and bake in the oven for about half an hour.
- Tip:
- You can bake the quiche the day before the guests arrive. Make the dough 2 days in advance. Then either serve cold or briefly put in the oven to warm up.
- The quiche also tastes vegetarian or instead of ham / bacon with salmon cubes.
- You can also prepare a tray vegetarian or experiment with other ingredients (salmon, spinach ).
