Riga Сheesecake

Almost everyone who has ever been to Riga has tasted this delicious cheesecake. Every decent cafe in Riga sells them, but finding the original recipe is very difficult. I propose a version of the Riga cheesecake, which I have left from Soviet times.

Ingredients

For the test:

  • Flour – 150 g
  • Butter – 100 g
  • Egg – 1 pc.
  • Sugar – 40 g
  • Salt – 1/2 teaspoon
  • Ground cinnamon – 1/2 teaspoon
  • Baking powder – 1/2 teaspoon

For filling:

  • Cottage cheese – 600 g
  • Eggs – 2 pcs.
  • Sugar – 100 g
  • Flour – 15 g (1/2 tablespoon)
  • Sour cream 20% (or butter) – 50 g
  • Vanilla sugar – 1 teaspoon
  • Raisins – 50 g
  • Salt – 1 pinch

For lubrication:

  • Yolk – 1 pc.
  • Sour cream – 1 teaspoon

Directions

  1. Prepare foods for the sand base. Cut the butter into cubes and freeze for half an hour. Prepare products for the filling. Pour the raisins with warm water for half an hour.
  2. Cooking the dough. Combine flour, salt, sugar, baking powder, cinnamon in a food processor. Add butter and grind everything into crumbs. Add the egg. Collect the dough in a com.
  3. Cover the bottom of the form with a size of 20×20 cm with parchment. Put the dough into a mold, form the base. Chop thickly with a fork and put in the refrigerator for 40 minutes. Place in the oven, preheated to 175 ° C, for 10 minutes.
  4. In the meantime, let’s get to the stuffing. Rub the curd through a sieve or grind with a blender. Add flour and grind. Dry the raisins and chop with a knife. Divide the eggs into whites and yolks. Beat the whites with a pinch of salt until fluffy.
  5. Beat the yolks with sugar. Add vanilla, sour cream (or butter, if the curd is low-fat). Mix. Mix the yolks with the curd. Introduce proteins and lastly raisins. Put the filling on the base, brush on top with yolk mixed with sour cream. Bake the Riga cheesecake for about 30 minutes at 175 ° C.
  6. Cool completely and cut into squares. The Riga cheesecake is ready
