Chocolate Сheesecake “Truffle” without Baking

We bring to your attention a recipe for the mega-chocolate Truffle cheesecake without baking. The cheesecake consists of three layers of chocolate: a base of chocolate chip cookies, a cream cheese filling with cream and chocolate, and a dark chocolate ganache on top. Cheesecake is decorated with homemade Truffle chocolates, which harmoniously complement this dessert.

Ingredients

  • For the basics:
    Chocolate cookies (or crackers) – 200 g
    Butter 82.5% (melted) – 100 g

  • For filling:
    Cream cheese (mascarpone) – 500 g
    Dark chocolate (not less than 70%) – 300 g
    Powdered sugar – 100 g
    Cream 33-35% – 500 ml
    Gelatin (powder) – 12 g
    Chocolate milk or plain cold milk (for gelatin) – 100 ml

  • For the chocolate ganache:
    Dark chocolate – 125 g
    Cream 33-35% (hot) – 100 ml
    *
  • For decoration:
    Truffles sweets – 15 pcs.

Instructions

  1. Preparing the base for the cheesecake.
    Place the chocolate chip cookies in a blender bowl or food processor. You can use a chocolate cracker or your favorite cookie.
  2. Grind the cookies into small crumbs. Add melted butter to the chopped liver. Turn on the food processor and whisk until the food mixes well.
  3. Lay the edges of the detachable form 20 centimeters in diameter with an acetate film.
  4. Put the resulting crumb into a mold and evenly distribute it along the bottom. Then tamp well with a glass or a special press to form salads. Put the chocolate chip base in the refrigerator for at least 30 minutes.
  5. Cooking the chocolate cheesecake filling. Pour gelatin with cold chocolate or regular milk. Mix well and leave for 10-15 minutes to swell.
  6. In a large bowl, combine room temperature cream cheese and half the powdered sugar. Whisk the cream cheese and powder on medium mixer speed until smooth and creamy, about 2 minutes.
  7. Add melted dark chocolate (room temperature) to the whipped cheese mass. Beat the cheese and chocolate mass on a medium mixer speed until the products are combined.
  8. Combine cold cream and the other half of the powdered sugar in a mixer bowl or deep bowl. Whisk.
  9. Begin to beat the cream at the low speed of the mixer, gradually increasing the speed as needed. Continue whipping cream and icing sugar until soft peaks and set aside.
  10. We heat the swollen gelatin until dissolved in a water bath or in another convenient way. But in no case do we boil, otherwise, the gelatin will lose its gelling properties!
  11. Pour still warm melted gelatin into the chocolate cheese mass. Stir quickly with a spatula until the food is combined.
  12. At the very end, add the whipped cream to the chocolate cheese mass in parts. Stir gently with a spatula from the bottom to top to keep the chocolate mousse airy.
  13. Put the finished chocolate filling on a prepared chilled cookie base. Level well (you can shake the mold a little so that the mousse is evenly distributed). Put the chocolate truffle cheesecake in the refrigerator for 2-3 hours or until it solidifies.
  14. Cooking the chocolate ganache to cover the cheesecake. Bring the cream to a boil, but don’t boil it! Break the dark chocolate into pieces and fill it with hot cream. Leave the chocolate with cream, without stirring, for 1-2 minutes.
  15. Then mix thoroughly until smooth. The working temperature of the chocolate ganache for covering the cheesecake is approx. 30 ° C.
  16. Take the frozen cheesecake out of the refrigerator and free it from the detachable form. Carefully go with a thin knife along the side and remove the acetate film.
  17. Top the cheesecake evenly with chocolate ganache over the entire surface. We make decorative streaks so that the ganache drips a little on the sides of the cheesecake.
  18. While the ganache is still not frozen, decorate the cheesecake with homemade Truffle chocolates along the entire peri.
