Ingredients
- 100 g rocket or lamb`s lettuce or spinach leaves
- 150 g feta cheese
- 1 handful cranberries, dried
- 1 handful walnuts
- 10 cocktail tomatoes or date tomatoes
- 3 tablespoon olive oil
- 2 tablespoon balsamic vinegar, darker
- 1 tablespoon honey or maple sirum
- 1 tablespoon mustard, medium hot
- salt

- For the salad, wash the rocket, cut the feta cheese into small pieces or crumble it. Chop or crumble the walnuts. Quarter the cherry tomatoes and put everything in a bowl, fold in the cranberries.
- For the dressing, stir together olive oil, balsamic vinegar, honey, mustard and a pinch of salt until you get a creamy dressing. Add a little more honey or mustard to taste. I like it a little sweeter.
- I always put the dressing over the salad just before serving.
