Ingredients

For the shortcrust pastry:

  • 150 g butter
  • 300 grams flour
  • 120 g suar
  • 1 egg (s)
  • 1 point lemon peel grated in sugar - or rubbed off. Zest an organic lemon
  • 0.5 ½ point vanilla sugar, (Bourbon vanilla)

For covering:

  • 1 ½ kg apples, sour (I prefer Elstar)
  • 1 lemon (s), add the juice from it
  • 0.5 teaspoon ½ cinnamon
  • 2 ½ tablespoon sugar
  • 200 g almond sticks
  • 5 tablespoon powdered sugar

Instructions

  1. Let the butter soften a little, then mix with the flour, sugar, vanilla sugar, lemon zest and egg in the food processor on the lowest setting and work everything into a smooth and supple dough. Let the dough rest in the refrigerator for 1 hour.
  2. In the meantime, peel and quarter the apples, remove the core and cut each quarter into wedges. To prevent the apples from browning, squeeze the lemon juice right at the beginning and mix it with the apples. Stir again and again so that all slices are wetted. Mix the apples with the cinnamon and sugar.
  3. Mix the almond sticks with powdered sugar in a pan and lightly roast over low heat, turning frequently.
  4. After the resting time, roll out the dough to the size of a tray (40 x 28 cm) and place on a greased and floured tray. Spread the apples on top and sprinkle the almond sticks evenly over them. Bake the cake on the middle rack at 190 ° for about 45 minutes. Cover with aluminum foil if the almonds get too dark.
