  • Carrots (large) – 430 g (2 pcs.)
  • Fresh parsley – 5 g

For the marinade:

  • Olive oil – 2 tbsp
  • Lemon – 0.5 pcs.
  • Garlic – 1 clove
  • Ground smoked paprika – 0.25 teaspoon
  • Ground black pepper – 0.25 teaspoon
  • Ground red pepper – 0.25 teaspoon
  • Zira (seeds) – 0.25 teaspoon
  • Salt – 0.5 teaspoon
  • Sugar – 0.5 teaspoon

  1. Prepare the food you need.

  2. Rinse the carrots, trim around the edges, peel and cut into thin circles or semicircles about 2 mm thick.
  3. In a saucepan, bring 700-800 ml of water to a boil. Put the carrots in boiling water and cover the pan with a lid. Boil the carrots over low heat for 4-5 minutes after boiling the water.
  4. Remove the boiled carrots from the water with a slotted spoon and cool. Grind the zira into a powder in a mortar. Wash the lemon and squeeze the juice. Peel the garlic and grate it on a fine grater. Combine all the ingredients for making the marinade, stir and let it brew for 10 minutes. Then add the marinade to the carrots. Rinse the parsley, dry and finely chop the leaves. Add chopped herbs to carrots.
  5. Gently mix everything together and leave to marinate for 1-2 hours. The carrots can be mixed several times for a more even marinating.
