Ingredients
- 1 medium papaya, green, unripe or 2 ripe but firm mangoes
- 2 tomato (s)
- 50 g peanuts, roasted, unsalted
- 2 cloves garlic
- 2 chilli pepper (s), red
- 2 teaspoons shrimp paste or anchovy paste
- 1 tablespoon palm sugar or brown sugar
- 3 tablespoon fish sauce
- 4 tablespoon lime juice
- 1 cucumber (s) and a few leaves ice cream to serve

- Halve the papaya, remove the black kernels with a spoon, peel and cut or slice into narrow strips. Wash, clean, halve and core the tomatoes and cut into narrow strips. Roughly chop the peanuts. Peel the garlic, chop very finely, halve the chili peppers, remove the seeds. Cut into fine strips.
- Coarsely puree the shrimp paste with 2 tablespoon papaya strips, fish sauce and sugar. Mix this paste well with the rest of the ingredients except for the lettuce leaves. Slice the cucumber thinly and add. Season the salad with lime juice. Arrange the lettuce leaves on a platter or plate and place the lettuce on top.
