Ingredients

For the dough:

  • 250 g flour
  • salt
  • 2 egg yolks
  • 125 g butter, cold or mararine
  • 2 tablespoons water, - 4 cold

For covering:

  • 100 g bacon
  • 1 tablespoon butter or margarine
  • 500 g onion (s), cleaned and weihed
  • 2 egg (s)
  • 2 egg whites
  • salt
  • Pepper, black
  • 125 ml cream
  • 100 g cheese, Gruyère in one piece
  • 100 g cheese, Emmentaler in one piece

Instructions

  1. Knead a shortcrust pastry from flour, salt, egg yolk, butter or margarine and cold water, wrap in cling film and refrigerate for 30 minutes.
  2. Dice the bacon, cut the onions into rings, coarsely grate the cheese.
  3. Fry the bacon in butter or margarine, add the onions and cook until light yellow. Allow to cool slightly.
  4. Whisk eggs, egg white, salt, pepper and cream, fold in the cheese.
  5. Line the bottom and edge of a springform pan with batter, pour the bacon and onion mixture on top. Pour the cheese, egg and cream mixture over it.
  6. Bake in the preheated oven on the lower rack at 225 ° C for approx. 30 - 40 minutes.
