Ingredients

  • 750 g butternut squash (se)
  • 2 large pear (s)
  • 1 medium shallot (s)
  • 25 g butter
  • 75 cl vegetable bouillon
  • 25 cl crème fraîche
  • salt and pepper
  • Ginger powder
  • Pumpkin Seed Oil

Instructions

  1. Peel and dice the pumpkin. Peel and halve the pears, remove the core and also dice. Finely chop the shallot.
  2. Melt the butter in a saucepan and sweat the shallot in it until translucent. Add the pumpkin and pear, stir for a few minutes and then pour in the bouillon. Let simmer for 20 minutes. Puree with a hand blender and stir in the crème fraîche. Season with salt, pepper and ginger powder. Drizzle with pumpkin seed oil if necessary.
