Warm Salad of Buckwheat, Bacon, Brussels Sprouts, Leeks and Apples

Warm salad with buckwheat, Brussels sprouts, and honey dressing – delicious with an original combination of products and an interesting way of cooking. You definitely haven’t tried this!

Servings: 6

Ingredients

  • Buckwheat groats – 3/4 cup 250 ml
  • Brussels sprouts – about 500 g
  • Low-fat bacon – 10 strips
  • Apples (medium size) – 2 pcs.
  • Leeks (medium size) – 1 pc.
  • Egg white – 1 pc.
  • Vegetable oil – 2 teaspoon
  • Thyme or sage, fresh leaves (finely chopped) – 1 tbsp
  • Honey – 1 tbsp (to taste)
  • Apple cider vinegar – 2 tbsp
  • Salt – 0.5 teaspoon (to taste)
  • Water – about 400 ml

Directions

  1. In a large non-stick skillet, fry the buckwheat over medium heat for 4-5 minutes. Allow cooling. Combine vegetable oil and egg white and beat until smooth. Combine with fried cereals, mix.
  2. Put the mixture of buckwheat, butter, and egg white in the same pan. Fry over medium heat, stirring occasionally, for 3 minutes, until the egg white is curdled and browned. Remove the pan from heating and let cool.
  3. Pour 0.25 teaspoons of salt into buckwheat and pour in water. Return the pan to high heat, bring to a boil. Cover the pan with a lid, reduce heat to a minimum. Cook buckwheat for about 10-12 minutes.
  4. In a large skillet, fry the bacon over medium heat until crispy. Transfer it to a plate and let cool. Leave 2 tablespoon in the pan. spoons of fat, which is melted from the bacon.
  5. Wash Brussels sprouts, removing damaged leaves. Dry it and cut it in half. Peel the leeks and cut them into quarters. Place the cabbage and leeks in a skillet with bacon grease. Add 0.25 teaspoons of salt, stir. Fry covered over medium heat for 5 minutes.
  6. Peel the apples, cut into 4 pieces and cut into thin slices. Send to the pan with cabbage and onions. Fry for 5-10 minutes.
  7. Prepare the sauce. Combine honey with thyme or sage. Warm-up for 1-2 minutes, you can use the microwave. Add apple cider vinegar and stir.
  8. Combine buckwheat with bacon and Brussels sprouts with leeks and apples. Add cooked honey sauce. Mix. Put the warm salad on a plate and serve.
