Winter Salad with Honey Mustard Dressing

Ingredients
- 100 g lamb`s lettuce
- 200 g beetroot, (lass), drained
- 0.5 ½ orange (s), the squeezed juice it
- 1 apple, approx. 200 g
- 2 tablespoon kernels (salad kernel mix), or sunflower kernels
- 250 g mushrooms, preferably fresh
- 4 tablespoon rapeseed oil
- Salt and pepper, from the mill
- 1 tablespoon honey, or 2 depending on your taste
- 2 teaspoons mustard, medium hot

- Clean the lamb`s lettuce and tear it apart. Drain the beetroot and cut into narrow strips. Squeeze the orange. Peel and core the apple, cut into fine wedges and drizzle with 1-2 tablespoons of orange juice. Distribute everything on plates.
- Lightly roast the lettuce kernels in a pan without fat, remove and allow to cool.
- Clean the mushrooms and cut into thin slices. Fry in 2 tablespoons of hot rapeseed oil, season with salt and pepper.
- Whisk the remaining orange juice with honey, mustard and remaining rapeseed oil, season with salt and pepper.
- Arrange the mushrooms and seeds on the salad, drizzle with the dressing and serve immediately
- Possibly you can stretch the salad dressing with water if it tastes too intense.
