Zucchini “Chebureki” with Minced Beef

A delicious dish of zucchini and minced meat that I call “zucchini chebureki. I’ve already tried cooking it in different ways. If you add pre-fried minced meat, as for me, it gets a little dry. I also tried adding both minced meat and cheese. But I like the recipe I’m sharing here most of all. It turns out very tasty and juicy. And it’s quick and easy to make – just the way you like it!

Ingredients

For the batter:

  • Zucchini – 600 g (2 pcs.)
  • Milk – 50 ml
  • Eggs – 1 pc.
  • Flour – about 100 g (2/3 cup of 250 ml)
  • Scallions (green part) – a small bunch
  • Salt – 1 teaspoon.

For the filling:

  • Beef (meat or minced meat) – 250 g
  • Water – 50 g (if necessary)
  • Scallions (remaining white part) – a small bunch
  • Salt – to taste
  • Pepper – to taste

Directions

  1. Grate the zucchini on a coarse grater.
  2. Put the zucchini in a colander, add a teaspoon of salt, mix it, and leave for 10-15 minutes, while we do the filling.
  3. I always make minced meat by myself. Cut 250 grams of beef into pieces and put them through a meat grinder.
  4. Finely chop the white part of the scallion and add it to the minced meat. Add a little water for juiciness. If you buy the minced meat, it won’t be necessary to add water as everything was already added to it. Add salt and pepper to taste. Mix everything.
  5. Squeeze out the zucchini. The more juice you manage to squeeze out, the less flour you can add.
  6. Add the egg and finely chopped scallion. I also add more salt as almost all the salt goes with the juice – I add about 1/3 teaspoon of salt.
  7. Add the milk.
  8. Add the flour gradually. You will need 100-120 g, maybe a little more or a little less – look at the consistency of the batter (like in the photo).
  9. Put 1/5 of the batter into a heated frying pan (if the frying pan is non-stick, it is not necessary to grease it with vegetable oil, but if you doubt, grease it with a thin layer). Put a few tablespoons of batter and spread it into a round thin pancake.
  10. After a few minutes, put 1/5 of the filling on one side of the pancake.
  11. Cover the pancake with its free part trying to make the edges stick together and fry it over medium heat for 3-4 minutes on each side until the filling is completely done inside.
