Airy Biscuit

For many desserts and cakes, biscuit dough is used. The biscuit recipe usually includes eggs, sugar, and flour (sometimes butter). But the airy biscuit can be prepared using different technologies. And today we will show you one of them!

Ingredients

  • Flour – 2 tbsp
  • Sugar – 2 tbsp
  • Eggs – 5 pcs.

Directions

  1. Turn on the oven.
  2. Separate the whites from the yolks.
  3. Beat the whites and half the sugar until firm.
  4. Grind the yolks white with the remaining half of the sugar. You can add grated lemon or orange zest, or ground nuts.
  5. Sift flour. Mix the yolks with flour.
  6. Then, carefully so that the mass does not fall off, add the whipped proteins in portions.
  7. All mixing movements from bottom to top in one direction.
  8. Grease the mold with oil.
  9. Put the dough in a greased baking dish.
  10. Place the dish in the oven preheated to 150 ° C. Increase the temperature to 180-200 ° C. Do not disturb the biscuit, open the oven, shake the baking sheet (at least the first 15 minutes of baking).
  11. To check the readiness, pierce the middle of the biscuit with a wooden stick – it must remain dry.
  12. As soon as the biscuit is ready, turn off the heat, open the oven door and leave the biscuit for 10 minutes.
    (If you let the airy sponge cake stand after baking for 8 hours to 2 days, it will cut easier.)
  13. Soak the biscuit with syrup, grease with cream.
