Apricot Cheesecake

Homemade cheesecake, apricot recipe. The cheesecake is not too sweet, with a slight sourness from apricot.

Ingredients

  • Salted herring fillet – 130 g
  • Baton – 1/2 pc. (8-10 pieces)
  • Butter – 50 g
  • Tomato paste – 1 tbsp
  • Sunflower oil – 2-3 tbsp
  • Ground black pepper – to taste

Directions

  1. Mix flour, cocoa, vanilla, and 6 tbsp sugar.
  2. Then add softened butter and grind into crumbs. We put it in the refrigerator for 15 minutes.
  3. Prepare the filling: in a blender, mix cottage cheese, eggs, sugar, apricots.
  4. We take out our dough, set aside 7-8 tbsp crumbs for sprinkling, and put the rest on the bottom of the mold, greased with butter or covered with parchment paper, pressing down with our hands. We make small sides.
  5. Pour our mixture onto the cake. And sprinkle the remaining crumbs on top.
  6. Bake the cheesecake for 30 minutes. at 180 degrees, and then another hour at 150 degrees.
  7. Take out the cheesecake only when it is completely cool.
