Asparagus Beans with Cheese Sauce

Asparagus beans with tofu cheese are a wonderful side dish for meat and poultry. Or you can just serve it as a vegetarian dish.
Ingredients
- Asparagus beans (green beans) – 500 g
- Tofu cheese (diced) – 200 g
- Shallots (cut into strips) – 2 pcs.
- Coconut milk – 200 g
- Roasted peanuts (chopped) – 25 g
- One lime juice
- Brown sugar – 2 teaspoon
- Soy sauce – 60 g (4 tablespoon. L.)
- Dried chili pepper (flakes) – 1 teaspoon.
Directions
- Cut the asparagus beans diagonally into small pieces. In a large saucepan, bring water to a boil, lightly salt. Place the beans in boiling water and blanch for about 30 seconds. Then put the beans in a colander, rinse under running cold water, let the water drain well. Transfer the beans to a serving bowl and set aside.
- Pour coconut milk into another saucepan, add cheese and shallots, bring to a boil, cook until cheese begins to crumble slightly. Add peanuts, lime juice, sugar, soy sauce and chili to a saucepan and cook, stirring occasionally, until sugar dissolves.
- Pour the cheese sauce over the asparagus beans, mix well. You can serve.
