Beans with Smoked Sausages in Tomato Sauce

Do you like tasty and satisfying food? Prepare the beans with smoked sausages in tomato sauce. Beans are prepared quite simply, they are very aromatic and tasty. Suitable for lunch and dinner as a complete meal.

Servings: 4

Ingredients

  • Beans – 265 g (dry weight)
  • Smoked sausages – 150 g
  • Carrots – 200 g (1 pc.)
  • Onions – 180 g (2 pcs.)
  • Garlic – 3 cloves
  • Fresh parsley – 20 g
  • Tomato paste – 90 g
  • Vegetable oil – 30 ml (2 tablespoons)
  • Flour – 25 g (1 tablespoon)
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Rinse dry beans well. Cover with cold water and leave for at least 3-4 hours, preferably overnight.
  2. Place the beans in a colander and rinse well. Then in a saucepan, pour cold water (about 1 liter) on the beans and heat them over high. After boiling, make a small heat and cook the beans for 30-50 minutes, almost until tender. After 5 minutes of boiling, I drain the water. I wash the beans and fill them with clean water. I bring it to a boil and cook it almost until tender.
  3. Close to the end of boiling the beans, it’s time to fry the vegetables. Peel the onion, wash and dry with a napkin to remove excess moisture. Dice the onion. Heat oil in a deep frying pan, add chopped onion. Fry for 4-5 minutes over low heat, stirring occasionally with a spatula.
  4. Peel, wash, and dry the carrots. Grate the carrots with a coarse grater. Add the grated carrots to the onion. Stir. Cook for 5-6 minutes over low heat, stirring occasionally.
  5. Dissolve the tomato paste in 350 ml of water. Pour flour into 100 ml of water and stir so that there are no lumps.
  6. Pour the diluted tomato paste into the fried onions and carrots. Stir. Bring to a boil and simmer for 2-3 minutes over low heat.
  7. Pour in flour and water. Stir. Bring to a boil and cook for 2-3 minutes.
  8. Throw the boiled beans in a colander. Add to skillet. Stir. Cook for 6-7 minutes from the moment of boiling over low heat.
  9. Cut the smoked sausages into pieces. Rinse the parsley and chop finely. Peel the garlic, cut it into slices. Add sausage, garlic, and herbs to the pan. Season to taste with ground black pepper and salt. Stir and bring to a boil. Cook for 1-2 minutes and remove from heat.
