Beef Stewed in Tomato-Coffee Sauce with Potatoes and Carrots

Original beef with vegetables, stewed in tomato paste, soy sauce, and black coffee sauce, will surprise you with a combination of flavors and aromas. Soft, tender meat and juicy vegetables melting in your mouth in a delicious gravy are what you need for lunch or dinner.

Ingredients

  • Beef – 600 g
  • Potatoes – 2 pcs. (300 g)
  • Carrots – 2 pcs. (300 g)
  • Bulb onions – 1 pc. (100 g)
  • Tomato paste – 80 g
  • Natural coffee (brewed) – 120 ml
  • Soy sauce – 2 tbsp
  • Salt – 1 teaspoon
  • Ground black pepper – 1/3 teaspoon
  • Sugar – 1 tbsp
  • Fresh parsley (for serving) – 2 sprigs

Directions

  1. Prepare all ingredients. It is better to use fresh meat that has not been frozen. brew natural coffee of medium strength or whatever you like. You should get 120 ml of finished coffee.
  2. Peel and wash onions and carrots. Cut the onion into 4 parts, cut the carrots into large pieces.
  3. Peel and wash the potatoes. Coarsely chop the potatoes – each tuber into 4-6 pieces.
  4. Wash the meat and pat dry with a paper towel. Then salt the meat generously with coarse salt and roll in black pepper.
  5. Place the vegetables on the bottom of a heavy-bottomed saucepan. Lightly salt and stir carrots, onions, and potatoes.
  6. Top with a seasoned piece of beef.
  7. For the sauce, combine the tomato paste, sugar, and the remaining salt in a deep bowl. Add brewed black coffee and soy sauce, stir all ingredients until smooth.
  8. Pour the resulting sauce into a pot of meat and vegetables.
  9. If the sauce does not cover the meat (the meat may protrude 1-2 cm from the top), add 100-200 ml of drinking water. Put the saucepan on the fire, bring the contents to a boil, reduce heat to low, and simmer the meat for 1.5-2 hours, until tender.
  10. After this time, the sauce has evaporated a little, the meat has become soft, and the vegetables are tender. Despite the long stewing, the vegetables did not collapse and retained their taste and aroma.
  11. Place the beef on a plate, spread the vegetables in the sauce around, and garnish with fresh parsley leaves.
  12. The meat turned out to be very soft, rich, with an original sweet taste and pleasant spiciness.
