Buckwheat Baked with Chicken, Cabbage and Bell Pepper

The perfect hearty and delicious lunch or dinner for the whole family. First, the chicken is fried with cabbage, bell peppers, and onions. Then vegetables and chicken are combined with buckwheat and cooked together in the oven. Buckwheat turns out to be crumbly, saturated with juices and aromas of chicken and vegetables. This dish will appeal to both adults and children.

Ingredients

  • Buckwheat groats – 1 glass of 200 ml
  • Chicken fillet – 300 g
  • White cabbage (young) – 200 g
  • Sweet red pepper – 100 g (1 pc.)
  • Bulb onions – 100 g (1 pc.)
  • Tomato paste – 2 tbsp
  • Salt – 0.5 teaspoon
  • Ground paprika – 1 teaspoon
  • Dried garlic – 1 teaspoon
  • Ground black pepper – a pinch
  • Vegetable oil (for frying) – 2 tbsp
  • Fresh basil (for serving) – 1-2 sprigs

Directions

  1. Rinse the bell peppers, remove the stalk and seeds. Cut the onion into large cubes, the pepper into thin strips.
  2. Cut the cabbage into thin strips.
  3. Cut the chicken fillet into cubes.
  4. Heat vegetable oil in a skillet. Arrange the cabbage, bell peppers, onions, and chicken. Fry the contents of the pan for about 8 minutes, until the color of the chicken changes and the vegetables are tender. Turn on the oven to preheat to 170 degrees.
  5. Transfer vegetables and meat from the pan to a baking dish.
  6. Pour buckwheat with cold water, rinse and drain. Rinse the cereal several more times until the water is clear.
  7. Place the buckwheat in a baking dish, add salt, black pepper, paprika, and dried garlic.
  8. Dilute the tomato paste with hot water and pour it into a mold.
  9. Stir the contents of the dish lightly and cover tightly with foil. Place the dish in a preheated oven for 40 minutes (use your own oven).
  10. Remove the dish from the oven, carefully remove the foil. Buckwheat baked with chicken, cabbage, and bell peppers is ready.
  11. Divide the dish into portioned plates, garnish with fresh herbs, and serve.
  12. Loose buckwheat, juicy chicken and sweet, vitamin-rich vegetables are the perfect combinations. My kids didn’t have a crumb left on their plates!
