Ingredients
- 1 head lettuce, (endive salad, /2 head may be enough)
- 0.5 liter ½ buttermilk, (possibly also kefir)
- 100 g walnuts, (rouhly chopped)
- 100 g bacon
- 2 tablespoons oil
- Salt and pepper, whiter
- possibly sugar, to taste
- 8 tuber / s potato (s), (depending on size)

- First add the nuts to the buttermilk, season with pepper and salt and possibly a little sugar to taste. Set aside and let it flow through.
- Wash, brush and cook the potatoes until they are done.
- Meanwhile, clean the lettuce and cut it into fine strips. Wash in warm water, this rinses out some of the bitter substances and makes the salad a little milder. Then rinse with cold water, spin dry and place in a large salad bowl.
- Dice the bacon and leave it in hot oil until the cracklings are crispy.
- Peel the potatoes cooked al dente.
- Only now add the buttermilk and walnut mixture to the salad and mix. Arrange on soup plates (even better pasta plates) and distribute the bacon cracklings on top while still hot.
- Pan the peeled potatoes in the bacon pan and serve with the salad.
- Best eaten with a spoon and fork.
