Cake “Pavlova”

The famous recipe for the Pavlova cake, which I did not dare to cook! I did it, everything is simple and incredibly tasty. It must be cooked and tasted, everything is so harmonious and enchanting!

Ingredients

  • Protein – 4 pcs. (120 g)
  • Sugar – 200 g
  • Corn starch – 1.5 tablespoon.
  • Lemon juice – 1 teaspoon
  • Vanilla extract – 2 drops

For filling:

  • Cream (33%) – 200 ml
  • Powdered sugar – 2 tablespoon.
  • Strawberries – 150-200 g

For decoration:

  • Fresh mint – 3 leaves

Directions

  1. To begin with, in a mixer bowl (at low speed), beat the whites with lemon juice until a little foam. We increase the speed and gradually add sugar.
  2. The proteins have grabbed, now add the vanilla extract (a few drops) and beat until stable peaks. And at the very end, add the starch and beat for another minute so that the starch is distributed.
  3. Put the proteins on the prepared parchment. I have outlined a circle from the outside, beyond which I will not go. Choose the size yourself.
  4. Please note, well-beaten egg whites should be glossy.
  5. We form the base of the cake, you should get a bowl with thick edges. In the middle, we make a depression for the cream and berries.
  6. Smooth the sides with a pastry palette or knife. And with the same palette on the sides, we make deep strokes (obliquely).
  7. The oven is preheated to 130 degrees. We put the cake for 10 minutes at a temperature of 130. Then we reduce the temperature to 90-100 degrees and bake (dry) for 1.5 hours.
  8. We take out the Pavlova cake from the oven, the crust is dry and crispy, but inside it is soft, like a soufflé. Cool it down. We start preparing the cream, it prepares very quickly.
  9. Beat the heavy cream (I have 33%) well, add powdered sugar in the process. A couple of tablespoons was enough for me, you focus on your taste.
  10. We put the finished cream in the cake bowl, the cream is very delicate!
  11. Cut the strawberries into beautiful pieces and distribute them over the cream.
  12. Now a few mints leave for beauty – and you get a great dessert that pleases the eye, and the taste is just bliss!
