1 medium egg yolk
1 tablespoon milk
some granulated sugar

Instructions

Put the flour in a mixing bowl and mix with the salt, sugar and vanilla sugar. Make a small hollow in the middle and add the egg and egg white, crumble the yeast over it.
Warm the milk and melt the butter in it and add to the flour. Knead everything with a mixer, first briefly on the lowest level, then on the highest level for about 4-5 minutes.
Cover and let the dough rise in a warm place for 10 minutes.
Knead the dough briefly on a floured work surface and cut in half.
Knead the granulated sugar under one half.
Shape both halves of the dough into rolls (approx. 32 cm long) and divide each roll into 16 equal pieces.
Shape the dough pieces into balls without the sugar and press them flat to a diameter of approx. 8 cm by hand. Use these thalers to enclose a piece of dough with granulated sugar and place the seam down on a baking sheet lined with baking paper. Covered and let go again until they have enlarged significantly.
Whisk the egg yolk with the milk, cut into the rolls with a sharp knife and brush with the egg milk. Finally, sprinkle with a little sugar.
In the preheated oven with top / bottom heat about 180,
Bake in hot air for about 160 degrees for 20-25 minutes.
Tip:
I let the dough rise in the oven at 50 degrees.
That works fine. No drafts and cozy and warm.
