Ingredients

  • 1 apple
  • 1 tablespoon butter
  • 2 teaspoons sugar, brown
  • cinnamon
  • Black pepper from the mill
  • possibly chilli flakes
  • 70 g oat cream cheese
  • some stalks thyme
  • 5 leaves chicory

Instructions

  1. Peel the apple, cut out the core and cut the pulp into cubes no more than one centimeter in size.
  2. Heat the butter in a pan over medium temperature, add the apple cubes, sprinkle with sugar and caramelize in about five minutes. Towards the end of the cooking time, sprinkle with cinnamon, pepper from the mill and possibly chilli flakes and season to taste. Take out of the pan and let cool down.
  3. Strip the thyme leaves from the stems and mix with the goat cream cheese.
  4. Place a teaspoon of fresh goat`s cheese and a tablespoon of diced apple on each chicory leaf.
