Corn Cake with Kefir, Raisins and Orange Zest

Recipe for homemade kefir cake, the dough for which is prepared on the basis of corn flour, with the addition of raisins and orange peel. The cornmeal cake is very tasty, has a golden brown crust, a soft aromatic crumb and a beautiful sunny color. Making corn cake is easy. It is equally good with both hot and cold drinks.

Ingredients

  • Corn flour – 80 g
  • Wheat flour – 100 g
  • Kefir – 60 ml
  • Butter – 60 g
  • Sugar – 80 g
  • Eggs – 2 pcs.
  • Baking soda – 0.5 teaspoon.
  • Orange peel – 1 teaspoon.
  • Raisins – 2 tbsp

Directions

  1. Prepare all the ingredients you need to make your kefir corn cake with raisins and orange zest.
    The butter should be soft, so remove it from the refrigerator beforehand and leave it at room temperature. Turn on the oven to heat up to 180 degrees.
  2. In a bowl, combine soft butter and sugar.
  3. Beat the butter and sugar with a mixer on high speed for about a minute.
  4. Without stopping whipping, add eggs to the butter mixture one at a time.
  5. Pour baking soda into kefir, mix. Pour kefir into the butter and egg mixture.
  6. Stir the mixture with a mixer on low speed for a few seconds.
  7. Then sift the wheat and corn flour into the base of the dough.
  8. Stir. You should have a smooth dough.
  9. Add raisins and orange zest to the dough. (I have dried orange peel that can be substituted for fresh. You can use lemon peel instead of orange peel.)
  10. Stir in the additives into the dough.
  11. Cover the bottom and sides of a rectangular shape with baking parchment. Put the cake dough into the prepared pan.
  12. Bake the corn cake in an oven preheated to 180 degrees for about 40 minutes, until golden brown. Check the readiness with a wooden stick – it should come out of the cake dry.
  13. Remove the prepared kefir corn cake from the mold, cool. Sprinkle icing or icing on the cake, if desired.
  14. Serve the corn muffin in portions.
