- 1 handful wakame, dried
- 1 tablespoon, heaped sesame seeds
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 3 tablespoon vinegar
- 1 tablespoon ginger, grated
- salt and pepper

- Peel the cucumber and cut it crosswise in two. Use a peeler to cut narrow strips lengthways all around. The soft inside is left over and is not used. Peel the onion, cut in half and cut lengthways into as narrow strips as possible. Put the cucumber and onion slices together in a bowl and lightly season with salt. Set aside for half an hour.
- Soak the algae in cold water and also set aside.
- Lightly toast the sesame seeds in a non-stick pan without adding any fat. Be careful not to get too dark.
- Pour the cucumber and onion slices into a colander and squeeze them out lightly. Transfer to a bowl and add the ginger, sugar, pepper, sesame oil and vinegar. I use normal light balsamic vinegar, of course you can also use rice vinegar in the proper style. Thoroughly squeeze out the algae, cut a little smaller and add the sesame seeds. Retain some of the sesame seeds and sprinkle on top for decoration. Season to taste, add salt if necessary, sprinkle with a little sesame seeds and serve.
- The recipe only makes a small amount of lettuce. It`s a small side salad or a small starter.
