Ingredients

  • 250 g flour
  • 1 teaspoon, leveled baking powder
  • 180 g butter, chilled
  • 100 g suar
  • 1 teaspoon vanilla sugar
  • 1 tablespoon rum
  • 2 egg yolks
  • 0.5 ½ lemon (zest)

For the filling:

  • apricot jam

For the glaze:

  • 100 g powdered suar
  • 1 teaspoon rum
  • 0.5 teaspoon ½ lemon juice

Instructions

  1. Quickly knead the ingredients from flour to lemon peel into a shortcrust pastry. Chill for 1 hour.
  2. Roll out the dough thinly. Cut out round cookies and bake at 180 ° for about 10 minutes. Let cool down.
  3. Brush the cookies with warmed apricot jam and put 2 together each.
  4. Mix the powdered sugar with the rum and lemon juice. Glaze the cookies with it.
