Ingredients

  • 150 g salt
  • 3 kg tomato (s), green
  • 1 kg onion (s)
  • 500 g suar
  • 250 g date (s), dried, cut into small pieces
  • 1 liter white wine vinegar, milder
  • 2 tablespoon mustard seeds
  • 2 tablespoon curry
  • 1 tablespoon cayenne pepper
  • 1 tablespoon turmeric, (turmeric root)
  • 2 teaspoons paprika powder, noble sweet
  • 1 teaspoon ginger, finely chopped

Instructions

  1. Roughly chop tomatoes and onions and season with salt overnight. If it is left to soak for a long time, the cooking time will be shorter, as tomatoes and onions will then become softer. Pour off the liquid.
  2. Let the tomatoes, onions, sugar, vinegar and mustard seeds cook for 20-30 minutes, uncovered, then mix in the dates and spices. Pour hot into clean glasses.
  3. The amount fills about six large screw-top jars.
