Ingredients

  • 400 g rye flour
  • 200 g wheat flour
  • 500 ml buttermilk, lukewarm
  • 1 tablespoon, leveled salt
  • 1 tablespoon wine vinegar, apple cider vinegar is also possible
  • 1 tablespoon lemon juice
  • 0.5 teaspoon ½ coriander
  • 1 cube fresh yeast

Instructions

  1. Mix both types of flour dry. Work the flour with the lukewarm buttermilk, salt, vinegar, lemon juice, coriander and yeast into a dough. Knead the dough vigorously and cover it in a warm place for about an hour.
  2. Put the dough in an oiled or greased loaf pan, bake on the middle rack of the oven for about 1 hour at 180 - 200 ° C and then leave to cool.
