Lamb Stewed with Potatoes and Dried Fruits (in the Oven)

Lamb stewed with potatoes and dried fruits in the oven is your incredibly aromatic and very appetizing lunch or dinner. The recipe is not too complicated, but the result will definitely impress you. The meat turns out to be juicy and tender, potatoes and carrots are soft but retain their shape, and dried fruits give a special flavor to the finished meat dish.

Servings: 6

Ingredients

  • Lamb – 500 g
  • Potatoes (medium-sized) – 6 pcs.
  • Carrots – 1 pc.
  • Onions (medium-sized) – 2 pcs.
  • Dried apricots – 10 pcs.
  • Seedless Raisins – 30 g (1 handful)
  • Dried dates – 3-4 pcs.
  • Salt – 1 teaspoon
  • Lamb seasoning – 0.5 teaspoon
  • Ground black pepper – 2 pinches
  • Vegetable oil – 2 tbsp
  • Fresh greens (for serving) – to taste

Directions

  1. Wash the meat and cut it into small pieces. Season with salt (2/3 teaspoon) and sprinkle with lamb spices. Stir the meat with salt and spices, cover with cling film and leave to marinate for several hours (2 hours at room temperature; you can leave it overnight, but then you need to put the meat in the refrigerator).
  2. Peel a large onion or two small ones and cut into thin half-rings. Heat a frying pan with vegetable oil (1 tablespoon) and add the onion.
  3. Saute the onions over moderate heat for 5-8 minutes, until light golden brown.
  4. Place the pieces of meat in a separate skillet/saucepan with a thick bottom, add 1 tablespoon. a spoonful of vegetable oil.
  5. Fry the meat for 15-20 minutes over medium heat. You can add just a little water, about 0.5 cups (100 ml), to the skillet/saucepan to soften the meat.
  6. Turn on the oven to heat up to 200 degrees. Put the fried lamb in a cauldron or heat-resistant clay pot.
  7. Cut the potatoes into large cubes and place them on the meat.
  8. Cut the carrots into semicircles and place them on top of the potatoes. Salt vegetables (1/3 teaspoon).
  9. Pitted dates and place on carrots. Spread the sautéed onions on top.
  10. Put the remaining dried fruits (raisins and dried apricots) on the onion. Close the pot with a lid and place it in an oven preheated to 200 degrees. Simmer the dish in the oven for 1 hour. Then lower the temperature to 160 degrees and cook the lamb for another 1 hour.
  11. After the specified time (2 hours), try the meat, if it is soft, then the dish is ready.
  12. This roast of lamb, potatoes, and dried fruits turned out to be incredibly tasty! Sprinkle it with black pepper, add fresh herbs and serve.
