Ingredients
- 100 g lamb`s lettuce
- 0.25 ¼ head frisee salad
- 2 spring onion (s)
- 2 pear (s), ripe
- 200 g Kasseler cold cuts
For the vinaigrette:
- 1 tablespoon mustard
- 1 tablespoon honey
- 4 tablespoon vinegar, (fruit vinegar)
- 4 tablespoon rapeseed oil
- some salt and pepper, black from the mill

- Preparation:
- Clean and wash the spring onions and cut into fine rings.
- Clean, wash, spin dry the lettuce and pluck it into small pieces.
- Wash the pears, quarter them, remove the core and cut into thin wedges.
- Roll up the Kasseler slices decoratively.
- For the vinaigrette, whisk together vinegar, salt, pepper, mustard and honey. Add the rapeseed oil drop by drop while beating constantly. Stir the prepared spring onions into the vinaigrette.
- Season the salad with a little salt and pepper from the mill. Please note that the mustard has a lot of flavor.
- Mix the two green salads and place on a plate or in a bowl. Arrange the pear slices and the Kasseler rolls decoratively on top and drizzle with the vinaigrette (do not drown in them).
- A strong wholemeal rye bread tastes good with it.
