Ingredients
- 225 ml vegetable oil, neutral, (rapeseed or sunflower oil)
- 0.5 ½ orange (s), organic, including the juice and the zest
- 1 splash lime juice
- 3 egg yolks
- 1 teaspoon, heaped tomato paste
- 1 tablespoon mustard, sweet
- 3 tablespoon, heaped ketchup
- 0.5 teaspoon ½ sea salt
- 2 tablespoon sugar, brown
- 0.5 teaspoon ½ curry powder
- 0.5 teaspoon ½ pepper, white
- 3 tablespoons beetroot juice, just for the color, is not absolutely necessary
- 2 cloves garlic, fresh, roughly diced

- Put all ingredients according to the list in a tall container. It is important that the container is only slightly wider than the cutting unit of the hand blender.
- Now lower the hand blender to the bottom of the mixer, let it start at the highest level and pull it up very slowly. If the first attempt does not result in a 100% bond, just do it again.
- The garlic is not absolutely necessary, but since we like to eat this sauce with shrimp, calamari and pastrami, we don`t want to miss the garlic in it. But it is a matter of taste and everyone should experiment if necessary. Just like the beetroot juice, which is not really noticeable in terms of taste, but supports the color. But it is not absolutely necessary either.
- The quantities in the list of ingredients result in a slightly firmer sauce that is also ideal as a dip. If you like it a little thinner, just use a little more oil, approx. 250 ml. I advise against olive oil because it has a too dominant taste.
